Soft Organic Coconut Cookie Recipe

Brock and I have been on a big coconut kick lately! We put it in everything – so I decided to give coconut cookies a try.  They’re organic, gluten-free, and delicious.  Not a traditional recipe, which is how I like to roll :)

Yield: 1 dozen cookies

Ingredients:

¾ cup organic brown rice flour

½ cup organic coconut flour

1 organic egg

1 tsp organic coffee extract

½ cup organic muscovado brown sugar*

1 tsp organic aluminum-free baking powder

2 Tbsp organic coconut oil

½ cup water

1/3 cup organic skim milk

½ - ¾ cup organic coconut flakes (unsweetened)**

Pinch of organic sea salt

¼ tsp organic ground cinnamon

*I was out of cane sugar but any sugar will work.

**If you like coconut – the more the better!

Directions:

1) Preheat oven to 425˚F.

2) Combine wet ingredients in a food processor.

3) Combine dry ingredients in a separate bowl (except coconut flakes).

4) Combine dry ingredients with wet ingredients.

5) Stir in coconut flakes.

6) Grease cookie pan with extra coconut oil or portion on cookie sheet.

7) Sprinkle extra coconut flakes overtop cookies.

8) Bake on middle rack for 12 minutes or until cookies turn golden brown.

9) Let cool for 5 minutes and enJOY!
